🍽️ Crunchy Pfeffernüsse with Lemon Glaze

Ingredients
- 50 g brown sugar
- 100 g honey
- 20 g butter
- 1 egg yolk
- 1 tsp gingerbread spice
- 1 pinch salt
- 175 g flour
- 0.5 tsp baking powder
- 1 tbsp rum
- 100 g pine nuts
- 150 g powdered sugar
- 1 tbsp lemon juice
Instructions
- 1. Put sugar, honey, and butter into a small saucepan.
- 2. Melt the ingredients while stirring constantly.
- 3. Remove the saucepan from the heat.
- 4. Let the mixture cool down.
- 5. Stir in the egg yolk, gingerbread spice, and salt.
- 6. Knead flour, baking powder, and rum into the mixture.
- 7. Make sure the dough is smooth.
- 8. Wrap the dough in cling film.
- 9. Chill the dough in the refrigerator for about 30 minutes.
- 10. Preheat the oven to 180 degrees Celsius fan setting.
- 11. Shape the dough into a log about 2 centimeters in diameter.
- 12. Cut the log into about 25 slices.
- 13. Shape the slices into walnut-sized balls.
- 14. Place the balls on a baking sheet lined with baking paper, leaving some space between them.
- 15. Place about 8 pine nuts on top of each ball.
- 16. Press the pine nuts down slightly.
- 17. Bake the Pfeffernüsse in the oven for 15 to 20 minutes.
- 18. Carefully remove the Pfeffernüsse from the baking sheet.
- 19. Let the Pfeffernüsse cool down completely.
- 20. Whisk powdered sugar and lemon juice into a thick glaze.
- 21. Glaze the cooled Pfeffernüsse with the mixture.
- 22. Let the glaze dry.
