🍰 Spicy Pepper Cookies

Ingredients
- 100 g walnut kernels (chopped)
- 70 g citron (chopped)
- 170 g honey
- 3 eggs
- 0.5 untreated lemon (zest)
- 1 tsp cinnamon powder
- 0.5 tsp clove powder
- 100 g dark chocolate
- 4 tbsp arrack
- 300 g flour
- 2 tsp baking powder
- 20 whole almond kernels (peeled)
- 150 g powdered sugar
- 3 tbsp lemon juice
Instructions
- 1. Warm the honey in a small saucepan.
- 2. Whisk the eggs together with the lemon zest until the mixture is creamy and airy.
- 3. Grate the dark chocolate finely.
- 4. Stir the chocolate in along with the spices, honey, candied lemon peel, nuts, and arrack to the egg cream.
- 5. Mix flour and baking powder in a separate bowl.
- 6. Gently fold this mixture in until you have a smooth, spreadable dough.
- 7. Line a baking sheet with baking paper.
- 8. Preheat the oven to 190 degrees Celsius fan-assisted.
- 9. Take a tablespoon and form about 30 thick, round dough mounds onto the tray.
- 10. Place an almond on each mound.
- 11. Bake them for about 20 minutes on the middle rack.
- 12. Remove the cookies and let them cool completely on a wire rack.
- 13. Stir the powdered sugar with lemon juice until smooth and free of lumps.
- 14. Glaze the cooled cookies with the mixture.
