🍽️ Creamy Pepper Sauce

Ingredients
- 1 onion
- 2 tbsp butter
- 1 tbsp black peppercorns
- 2 tbsp flour
- 200 ml meat broth
- 100 ml whipping cream (30%)
- 2 tbsp green peppercorns (jar)
- salt
- 20 ml cognac
- 1 tbsp crème fraîche
- pepper (from the mill)
Instructions
- 1. Heat a pan over medium heat and add the butter.
- 2. Peel the onion and cut it into very small cubes.
- 3. Add the onion cubes to the hot butter and sauté them until they are soft and translucent.
- 4. Add the coarsely crushed black peppercorns and sauté them briefly.
- 5. Dust the mixture with flour and stir well to distribute it evenly.
- 6. Deglaze the pan with the meat broth and keep stirring until the flour dissolves.
- 7. Add the cream to the pan and stir it in.
- 8. Let the sauce simmer gently on low heat for about 10 minutes.
- 9. Stir the green peppercorns into the finished sauce.
- 10. Season the sauce to taste with salt and a splash of cognac.
- 11. Place a dollop of crème fraîche on the plate as a garnish.
- 12. Sprinkle the sauce with freshly ground pepper and serve.
