  1. 1. Mix all ingredients in the listed order using a hand mixer until you have a smooth batter. Gently fold in the stiffly beaten egg whites. Wash the raspberries and pat them dry with a kitchen towel.
  2. 2. Fry the batter in a non-stick pan in slices 3 to 4 millimeters thick. Place the pancakes on a board and cut out flower and star shapes using large cookie cutters or a sharp knife.
  3. 3. Serve the pancakes garnished with fresh raspberries and a drizzle of maple syrup.
