🍽️ Quick Pancakes with Berries

Ingredients
- 150 g wheat flour
- 50 g spelt flour
- 2 tsp baking powder
- 1 pinch salt
- 150 ml buttermilk
- 2 egg yolks
- 1 tbsp cane sugar
- 2 egg whites (whipped to stiff peaks)
- 2 tbsp oil
- 125 g raspberries
- maple syrup
Instructions
- 1. Mix all ingredients in the listed order using a hand mixer until you have a smooth batter. Gently fold in the stiffly beaten egg whites. Wash the raspberries and pat them dry with a kitchen towel.
- 2. Fry the batter in a non-stick pan in slices 3 to 4 millimeters thick. Place the pancakes on a board and cut out flower and star shapes using large cookie cutters or a sharp knife.
- 3. Serve the pancakes garnished with fresh raspberries and a drizzle of maple syrup.
