🍰 Spiced Pear Pancakes

Ingredients
- 100 g spelt wholemeal flour
- 1 tsp baking powder
- 1 pinch salt
- 75 g buttermilk
- 1 egg
- 3 tbsp rapeseed oil
- 1 tbsp raw cane sugar
- 2 large pears (150 g each)
- 1 tbsp maple syrup
- 2 tbsp orange juice
- 1 cinnamon stick
- 1 star anise
Instructions
- 1. Put flour, baking powder, and salt in a bowl and mix them.
- 2. Whisk buttermilk, egg, one tablespoon of rapeseed oil, and cane sugar well in a second bowl.
- 3. Stir the flour mixture into the liquid mixture gradually.
- 4. Let the batter rest for 30 minutes.
- 5. Peel the pears.
- 6. Cut the pears into eight pieces.
- 7. Remove the cores from the pear pieces.
- 8. Put maple syrup, orange juice, a cinnamon stick, and star anise in a pot.
- 9. Bring the spice mixture to a boil.
- 10. Add the pear pieces to the pot.
- 11. Simmer the pears gently over low heat for 6 to 8 minutes.
- 12. Heat the remaining rapeseed oil in a large pan.
- 13. Pour the batter into the hot pan in portions.
- 14. Fry the pancakes golden brown for 2 to 3 minutes over medium heat.
- 15. Flip the pancakes and fry them for another 2 to 3 minutes until golden brown.
- 16. Keep the finished pancakes warm in the preheated oven at 80 degrees Celsius (convection 60 degrees Celsius, gas setting 1).
- 17. Repeat the frying process until a total of 8 pancakes are ready.
- 18. Serve the pancakes with the warm pear compote.
