  1. 1. Put flour, baking powder, and salt in a bowl and mix them.
  2. 2. Whisk buttermilk, egg, one tablespoon of rapeseed oil, and cane sugar well in a second bowl.
  3. 3. Stir the flour mixture into the liquid mixture gradually.
  4. 4. Let the batter rest for 30 minutes.
  5. 5. Peel the pears.
  6. 6. Cut the pears into eight pieces.
  7. 7. Remove the cores from the pear pieces.
  8. 8. Put maple syrup, orange juice, a cinnamon stick, and star anise in a pot.
  9. 9. Bring the spice mixture to a boil.
  10. 10. Add the pear pieces to the pot.
  11. 11. Simmer the pears gently over low heat for 6 to 8 minutes.
  12. 12. Heat the remaining rapeseed oil in a large pan.
  13. 13. Pour the batter into the hot pan in portions.
  14. 14. Fry the pancakes golden brown for 2 to 3 minutes over medium heat.
  15. 15. Flip the pancakes and fry them for another 2 to 3 minutes until golden brown.
  16. 16. Keep the finished pancakes warm in the preheated oven at 80 degrees Celsius (convection 60 degrees Celsius, gas setting 1).
  17. 17. Repeat the frying process until a total of 8 pancakes are ready.
  18. 18. Serve the pancakes with the warm pear compote.
