🍽️ Asparagus and Ham Crepe Rolls

Ingredients
- 200 g flour
- 2 eggs
- 500 ml milk
- salt
- 40 g ghee
- 24 stalks green asparagus
- 16 slices Parma ham
- butter (for the dish)
- 150 g freshly grated Parmesan
- pepper (from the mill)
Instructions
- 1. Mix flour, eggs, milk, and a pinch of salt in a bowl until the batter is smooth.
- 2. Let the batter rest for 20 minutes.
- 3. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 4. Heat some ghee in a frying pan.
- 5. Pour one ladle of batter into the hot pan.
- 6. Tilt and rotate the pan to spread the batter evenly.
- 7. Fry the pancake for about 2 minutes on each side until golden brown.
- 8. Remove the finished pancake and keep it warm.
- 9. Repeat the process with the remaining batter until all pancakes are baked.
- 10. Thoroughly wash the asparagus.
- 11. Peel the bottom third of the asparagus stalks.
- 12. Cut off the woody ends of the stalks.
- 13. Boil the asparagus in salted water for 5 to 7 minutes (blanching).
- 14. Remove the asparagus from the water and let it drain.
- 15. Lay the pancakes side by side on a work surface.
- 16. Top each pancake with 2 slices of ham.
- 17. Place 3 asparagus stalks on the ham.
- 18. Roll the pancakes up tightly.
- 19. Place the rolls in a buttered baking dish.
- 20. Sprinkle cheese over the rolls.
- 21. Bake the rolls in the preheated oven for 15 to 20 minutes.
- 22. Serve the finished rolls with ground pepper.
