🍽️ Caviar and Shrimp Rolls in Thin Pancake Wraps

Ingredients
- 2 Eggs
- 175 g Flour
- Salt
- 1 tsp. Baking Powder
- 350 ml Milk (1.5% fat)
- 4 tsp Rapeseed oil
- Lemons
- 1 Apple
- Chives
- 300 g cooked Shrimp (peeled and deveined)
- 2 sprigs Dill
- 4 tsp Caviar
Instructions
- 1. Whisk the eggs with the flour, a pinch of salt, the baking powder, and the milk until you have a smooth batter.
- 2. Heat one teaspoon of oil in a frying pan.
- 3. Pour one quarter of the batter into the pan.
- 4. Gently tilt and rotate the pan to spread the batter evenly and thinly.
- 5. Fry the pancake until golden brown on both sides.
- 6. Remove the pancake and let it drain on kitchen paper and cool down.
- 7. Repeat the process until you have baked a total of four pancakes.
- 8. Squeeze half of the lemon.
- 9. Wash the apple.
- 10. Cut the apple into quarters and remove the core.
- 11. Cut the apple pieces into thin matchsticks.
- 12. Toss the apple matchsticks immediately with one tablespoon of lemon juice.
- 13. Wash the chives and shake them dry.
- 14. Slice the shrimp in half lengthwise.
- 15. Wash the dill and shake it dry.
- 16. Pluck off the fine dill tips.
- 17. Lay the four pancakes side by side on a work surface.
- 18. Spread the apple matchsticks, the shrimp halves, the chive pieces, and the caviar in the top quarter of each pancake.
- 19. Shape the ingredients into a long strip about two centimeters wide.
- 20. Roll up each pancake tightly.
- 21. Cut the rolls into slices about three centimeters wide.
- 22. Garnish the rolls with the plucked dill tips.
