  1. 1. Whisk the eggs with the flour, a pinch of salt, the baking powder, and the milk until you have a smooth batter.
  2. 2. Heat one teaspoon of oil in a frying pan.
  3. 3. Pour one quarter of the batter into the pan.
  4. 4. Gently tilt and rotate the pan to spread the batter evenly and thinly.
  5. 5. Fry the pancake until golden brown on both sides.
  6. 6. Remove the pancake and let it drain on kitchen paper and cool down.
  7. 7. Repeat the process until you have baked a total of four pancakes.
  8. 8. Squeeze half of the lemon.
  9. 9. Wash the apple.
  10. 10. Cut the apple into quarters and remove the core.
  11. 11. Cut the apple pieces into thin matchsticks.
  12. 12. Toss the apple matchsticks immediately with one tablespoon of lemon juice.
  13. 13. Wash the chives and shake them dry.
  14. 14. Slice the shrimp in half lengthwise.
  15. 15. Wash the dill and shake it dry.
  16. 16. Pluck off the fine dill tips.
  17. 17. Lay the four pancakes side by side on a work surface.
  18. 18. Spread the apple matchsticks, the shrimp halves, the chive pieces, and the caviar in the top quarter of each pancake.
  19. 19. Shape the ingredients into a long strip about two centimeters wide.
  20. 20. Roll up each pancake tightly.
  21. 21. Cut the rolls into slices about three centimeters wide.
  22. 22. Garnish the rolls with the plucked dill tips.
