🍰 Fluffy Pancakes with Warm Plum Filling

Ingredients
- 4 Eggs
- 125 g Flour
- 0.25 l Milk
- 1 tbsp Sugar
- 4 tbsp Butter
- 1 jar Plums
- 1 packet Vanilla Sugar
- 1 Cinnamon Stick
- 1 Clove
- 1 tbsp Cornstarch
- Powdered Sugar
Instructions
- 1. Whisk the eggs, flour, milk, and sugar in a large bowl until the batter is smooth.
- 2. Let the batter rest for 30 minutes in a quiet place to relax.
- 3. Melt some butter in a non-stick pan over medium heat.
- 4. Fry eight thick pancakes from the batter until golden brown.
- 5. Place the plums in a colander and let the juice drain completely.
- 6. Pour the drained plum juice, vanilla sugar, cinnamon, and clove into a small saucepan.
- 7. Bring the liquid to a boil once.
- 8. Add the drained plums to the pot.
- 9. Mix the cornstarch (a thickener from corn or potatoes) with a little cold water until smooth.
- 10. Stir the starch-water mixture into the fruit mixture.
- 11. Bring the compote to a boil once to thicken.
- 12. Let the compote cool down completely.
- 13. Fill the cooked pancakes with the cooled plum compote.
- 14. Dust the pancakes with powdered sugar before serving.
