🍰 Fluffy Pancakes with Homemade Vanilla Cream

Ingredients
- 3 Eggs
- 175 g Flour
- 250 ml Milk
- Salt
- Butter (for frying)
- 600 ml Milk
- 2 Egg Yolks
- 100 g Sugar
- 2 tbsp Wheat Starch
- 1 Pack Vanilla Sugar
- 2 tbsp Rum
- 400 g Berries (red and black currants, raspberries)
- 2 Egg Whites
- 100 g Powdered Sugar
- 4 Rosé Wine
Instructions
- 1. Pour the milk and sugar into a pot.
- 2. Bring the mixture to a boil while stirring.
- 3. Stir in the wheat starch (cornstarch).
- 4. Continue cooking the mixture for 1 to 2 minutes until it thickens.
- 5. Remove the pot from the heat.
- 6. Stir the egg yolk into the hot mixture.
- 7. Season the cream with vanilla sugar and rum.
- 8. Let the vanilla cream cool down completely.
- 9. Whisk the egg white with a fork until foamy.
- 10. Brush the rose petals with the egg white foam.
- 11. Sprinkle the petals with powdered sugar.
- 12. Dry the petals for 2 to 3 hours in a lukewarm oven or in strong sunlight.
- 13. Turn the petals repeatedly during this time.
- 14. Sprinkle the petals with powdered sugar again.
- 15. Whisk the eggs, milk, flour, and a pinch of salt in a bowl.
- 16. Stir until you have a smooth batter.
- 17. Let the batter rest for 20 minutes.
- 18. Heat some butter in a pan with a diameter of about 18 to 20 centimeters.
- 19. Pour one quarter of a ladleful of batter into the pan.
- 20. Spread the batter evenly in the pan.
- 21. Cook the pancake for about 3 minutes over medium heat.
- 22. Carefully flip the pancake using a lid or a flat plate.
- 23. Finish cooking the pancake on the other side.
- 24. Repeat this process until you have made a total of 4 pancakes.
- 25. Keep the finished pancakes warm in the oven at about 70 degrees Celsius.
- 26. Spread the cooled vanilla cream over the pancakes.
- 27. Fold the pancakes into quarters.
- 28. Place the folded pancakes on the plates.
- 29. Sprinkle the washed berries over the pancakes.
- 30. Serve the dish together with the candied rose petals.
