  1. 1. Mix milk and flour in a bowl until the batter is smooth and lump-free.
  2. 2. Add the eggs and beat them well into the mixture.
  3. 3. Stir in the melted butter, sugar, and a pinch of salt.
  4. 4. Let the batter rest in a quiet place for 10 to 15 minutes.
  5. 5. Clean the violet flowers of any dirt.
  6. 6. Set aside a few beautiful flowers for decoration.
  7. 7. Wash the orange under hot water and pat it dry.
  8. 8. Grate the zest finely and squeeze out some juice.
  9. 9. Whisk the cream cheese with the vanilla sugar and the honey.
  10. 10. Add the grated orange peel and 2 to 3 tablespoons of orange juice.
  11. 11. Stir the filling until it is smooth.
  12. 12. Gently fold the violet flowers into the pancake batter.
  13. 13. Add some butter to a hot pan.
  14. 14. Spread the bottom thinly with batter.
  15. 15. Fry the pancakes at medium heat for about 1 minute until golden brown.
  16. 16. Flip the pancakes.
  17. 17. Fry them for another approx. 1 minute on the other side.
  18. 18. Repeat this with the remaining batter until you have baked 8 pancakes.
  19. 19. Keep the finished pancakes warm in the oven at 80 degrees Celsius if needed.
  20. 20. Spread each pancake with the cheese cream.
  21. 21. Roll up the filled pancakes.
  22. 22. Dust them with powdered sugar.
  23. 23. Serve them garnished with the remaining violet flowers.
