🍳 Pancakes with Fruit

Ingredients
- 120 g flour
- 2 tbsp sugar
- 0.5 tsp baking powder
- 1 tbsp vanilla sugar
- 1 pinch salt
- 200 ml milk
- 1 egg
- vegetable oil (for frying)
- 2 oranges
- 250 g strawberries
- 2 bananas
- 2 tbsp lemon juice
- 1 tbsp honey
- 2 tbsp freshly chopped mint
- 1 mango
- 2 tbsp liquid honey (for drizzling)
- powdered sugar (for dusting)
Instructions
- 1. Mix flour, sugar, baking powder, vanilla sugar, and salt in a bowl.
- 2. Stir in the milk until a thick batter forms.
- 3. Add the beaten egg to the batter and stir it in.
- 4. Let the batter rest for about 20 minutes.
- 5. Peel the oranges and cut out the segments.
- 6. Squeeze the remaining pulp and reserve the juice for the sauce.
- 7. Wash the strawberries, remove the stems, and cut them into quarters.
- 8. Peel the bananas and slice them.
- 9. Place the fruit in a bowl.
- 10. Toss the fruit with lemon juice, honey, and mint.
- 11. Peel the mango and cut the flesh off the pit.
- 12. Blend the mango with a little orange juice in a mixer until smooth.
- 13. Heat some oil in a non-stick pan.
- 14. Pour about one tablespoon of batter into the hot pan.
- 15. Fry the pancake for 1 to 2 minutes until golden brown.
- 16. Flip the pancake and cook for about 1 minute more.
- 17. Remove the pancake from the pan.
- 18. Repeat the process until about 16 small pancakes are baked.
- 19. Keep the pancakes warm in the oven at 80 degrees Celsius if needed.
- 20. Arrange the pancakes on plates.
- 21. Drizzle the pancakes with a little honey.
- 22. Serve the fruit salad alongside.
- 23. Drizzle some mango sauce over the pancakes.
- 24. Serve the remaining fruit salad separately.
- 25. Dust the pancakes with powdered sugar.
