Ingredients
- 140 ml Milk
- 80 g Flour
- 30 g melted Butter
- 30 g Sugar
- 2 Eggs
- 1 Egg Yolk
- 1 tbsp Lemon Juice
- 1 pinch Salt
- 3 tbsp Ghee
- 2 ripe Peaches
- 100 g Raspberries
Instructions
- 1. Mix all the pancake ingredients into a smooth batter and let it rest for 20 minutes. Heat ghee in a small frying pan and fry 8 thin pancakes one after the other. Keep the finished pancakes warm in the preheated oven at 70 degrees.
- 2. Blanch the peaches with boiling water, peel them, halve them, remove the stones, and cut them into wedges. Pick over the raspberries. Fill the pancakes with the fruit, plate them, and serve.
