🍳 Pancakes with Exotic Fruits

Ingredients
- 1 Orange
- 2 Kiwis
- 0.5 Mango
- 100 g Strawberries
- 4 Eggs
- 300 ml Coconut Drink
- 1 Pinch Salt
- 50 g Almond Flour
- 45 g Spelt Flour Type 1050
- 1 Tbsp Butter
- 300 g Low-fat Quark
- 1 Tbsp Milk (1.5% Fat)
- 2 Tbsp Coconut Flakes
Instructions
- 1. Segment the orange (remove peel and membranes). Peel the kiwi and the mango. Cut the mango flesh off the pit. Dice the kiwi and mango. Wash the strawberries and remove the stems. Cut the strawberries in half. Place the cut fruit in a bowl and mix.
- 2. Whisk the eggs, coconut drink, and salt together in a bowl. Combine the almond flour and spelt flour in a separate bowl. Stir the flour mixture into the egg liquid to form a smooth batter.
- 3. Heat the butter in a frying pan. Cook 8 thin pancakes one after the other over medium heat. Bake each pancake for about 2 to 3 minutes on each side until golden brown.
- 4. Stir the low-fat quark with 2 tablespoons of milk (30 ml) until smooth. Fill the pancakes with the quark mixture and the fruit. Sprinkle the finished pancakes with coconut flakes and serve.
