🍽️ Sweet and Savory Pancakes with Date and Onion Filling

Ingredients
- 2 eggs
- 250 g flour
- 450 ml milk
- salt
- 0.5 tsp baking powder
- ghee (for frying)
- 3 onions
- 10 dried dates
- 1 tbsp peeled hazelnuts
- 2 tbsp butter
- 1 tbsp liquid honey
- 2 spring onions
Instructions
- 1. Whisk the eggs, flour, milk, a pinch of salt, and baking powder together until you have a smooth batter.
- 2. Heat some ghee in a frying pan.
- 3. Pour one ladleful of batter into the pan.
- 4. Tilt and rotate the pan to spread the batter evenly.
- 5. Fry the pancake until golden brown on both sides.
- 6. Remove the finished pancake from the pan.
- 7. Keep the pancake warm in the oven at 80 degrees Celsius (top and bottom heat).
- 8. Repeat the process with the remaining batter until you have baked a total of 8 pancakes.
- 9. Peel the onions and cut them into thin strips.
- 10. Pit the dates and cut them into strips as well.
- 11. Roughly chop the nuts.
- 12. Lightly toast the nuts in a hot pan.
- 13. Add the butter to the pan and let it melt.
- 14. Add the onion strips to the pan and sauté them until golden yellow.
- 15. Add the date strips.
- 16. Drizzle the honey over the mixture.
- 17. Let the mixture caramelize slightly.
- 18. Rinse the spring onions.
- 19. Trim the spring onions.
- 20. Slice the spring onions into thin rings.
- 21. Cover half of the pancakes with the onion-date mixture.
- 22. Fold the pancakes in half.
- 23. Plate the pancakes.
- 24. Sprinkle the pancakes with the spring onion rings.
- 25. Serve the pancakes.
