🍰 Crêpes with Raspberry Sauce

Ingredients
- 140 ml Milk
- 80 g Flour
- 30 g melted Butter
- 30 g Sugar
- 2 Eggs
- 1 Egg Yolk
- 1 tbsp Lemon Juice
- 1 Pinch Salt
- 3 tbsp Ghee (for frying)
- 250 g fresh Raspberries
- 2 tbsp Sugar
Instructions
- 1. Mix all the ingredients for the batter into a smooth crêpe batter and let it rest for 20 minutes. Heat ghee in a small frying pan and fry 8 thin crêpes one after the other. Keep the finished crêpes warm in the oven at 70 degrees.
- 2. Pick over the raspberries to remove any leaves or stems. Place them in a small saucepan with the sugar and 100 milliliters of water, bring to a boil, and simmer covered for 1 minute. Strain the mixture through a sieve and let the sauce cool in the refrigerator.
- 3. Serve the crêpes on plates and top them with the raspberry sauce. Garnish with fresh raspberries if desired. Whipped cream makes a delicious side dish.
