  1. 1. Mix all the ingredients for the batter into a smooth crêpe batter and let it rest for 20 minutes. Heat ghee in a small frying pan and fry 8 thin crêpes one after the other. Keep the finished crêpes warm in the oven at 70 degrees.
  2. 2. Pick over the raspberries to remove any leaves or stems. Place them in a small saucepan with the sugar and 100 milliliters of water, bring to a boil, and simmer covered for 1 minute. Strain the mixture through a sieve and let the sauce cool in the refrigerator.
  3. 3. Serve the crêpes on plates and top them with the raspberry sauce. Garnish with fresh raspberries if desired. Whipped cream makes a delicious side dish.
