🍰 Fluffy Pancakes with Warm Apple Compote

Ingredients
- 1 Organic Lemon
- 50 ml White Wine (or white grape juice)
- 1 Cinnamon Stick
- 750 g Apples
- 30 g Honey (2 Tbsp)
- 0.25 tsp Vanilla Powder
- 250 g Whole Wheat Flour
- 400 ml Oat Drink (Oat Milk)
- 1 Pinch Salt
- 3 Eggs
- 2 Tbsp Rapeseed Oil
Instructions
- 1. Rinse the lemon under hot water and pat it dry with a cloth.
- 2. Grate the lemon zest finely and squeeze out the juice.
- 3. Place the lemon zest, juice, 450 milliliters of water, the wine, and the cinnamon stick in a large pot.
- 4. Bring the mixture in the pot to a boil.
- 5. Peel the apples and remove the core.
- 6. Cut the apple flesh into wedges or cubes.
- 7. Add the apple pieces to the boiling liquid.
- 8. Let the mixture come back to a boil briefly.
- 9. Simmer the compote over low heat for 5 to 10 minutes.
- 10. Remove the pot from the heat as soon as the apples are soft.
- 11. Take out the cinnamon stick from the compote.
- 12. Sweeten the apple compote with one tablespoon of honey.
- 13. Finish the flavor with a little vanilla powder.
- 14. Whisk the flour with the milk, the remaining honey, and the salt until you have a smooth batter.
- 15. Stir the eggs into the batter.
- 16. Let the batter rest, covered, for about 15 minutes.
- 17. Heat some oil in a large pan.
- 18. Pour a portion of batter into the hot pan.
- 19. Cook the pancake over medium heat for 3 to 4 minutes until golden brown.
- 20. Flip the pancake and cook for another 3 to 4 minutes until golden brown.
- 21. Use the remaining batter in the same way to cook more pancakes.
- 22. Fill the finished pancakes with the apple compote.
- 23. Roll up the filled pancakes.
- 24. Serve the pancakes immediately.
