🍽️ Quick Stir-Fried Green Asparagus with Shrimp

Ingredients
- 500 g green asparagus
- 1 tsp seed oil (corn germ oil)
- 100 ml classic vegetable broth
- 3 sprigs cilantro
- 50 g shrimp (ice shrimp; cooked and peeled)
- 2 tbsp light soy sauce
- salt
- pepper
Instructions
- 1. Thoroughly wash the green asparagus.
- 2. Cut off the woody, lower ends of the stalks.
- 3. Peel the bottom third of each asparagus stalk.
- 4. Cut the stalks diagonally into three equal pieces.
- 5. Heat the oil in a wok or a large frying pan.
- 6. Pour half of the vegetable broth into the hot pan.
- 7. Add the asparagus to the pan.
- 8. Fry the asparagus over high heat, turning it constantly.
- 9. Cook the asparagus for 7 to 10 minutes until it is tender-crisp.
- 10. Wash the coriander plant thoroughly.
- 11. Shake the coriander dry.
- 12. Pluck the small coriander leaves from the stems.
- 13. Rinse the shrimp briefly under running water.
- 14. Let the shrimp drain well.
- 15. Pat the shrimp dry with kitchen paper.
- 16. Add the remaining vegetable broth to the pan just before the asparagus is done.
- 17. Add the dry shrimp to the pan.
- 18. Heat the shrimp briefly in the broth.
- 19. Season the dish with soy sauce.
- 20. Salt and pepper to taste.
- 21. Sprinkle the finished asparagus with the fresh coriander leaves.
- 22. Serve the dish immediately while warm.
