  1. 1. Thoroughly wash the green asparagus.
  2. 2. Cut off the woody, lower ends of the stalks.
  3. 3. Peel the bottom third of each asparagus stalk.
  4. 4. Cut the stalks diagonally into three equal pieces.
  5. 5. Heat the oil in a wok or a large frying pan.
  6. 6. Pour half of the vegetable broth into the hot pan.
  7. 7. Add the asparagus to the pan.
  8. 8. Fry the asparagus over high heat, turning it constantly.
  9. 9. Cook the asparagus for 7 to 10 minutes until it is tender-crisp.
  10. 10. Wash the coriander plant thoroughly.
  11. 11. Shake the coriander dry.
  12. 12. Pluck the small coriander leaves from the stems.
  13. 13. Rinse the shrimp briefly under running water.
  14. 14. Let the shrimp drain well.
  15. 15. Pat the shrimp dry with kitchen paper.
  16. 16. Add the remaining vegetable broth to the pan just before the asparagus is done.
  17. 17. Add the dry shrimp to the pan.
  18. 18. Heat the shrimp briefly in the broth.
  19. 19. Season the dish with soy sauce.
  20. 20. Salt and pepper to taste.
  21. 21. Sprinkle the finished asparagus with the fresh coriander leaves.
  22. 22. Serve the dish immediately while warm.
