🍽️ Creamy Parsnip Soup

Ingredients
- 200 g parsnip
- 2 carrots
- 1 onion
- 1 garlic clove
- 800 ml vegetable broth
- 50 ml whipping cream
- 2 tbsp crème fraîche
- 2 tbsp parsley (chopped)
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
Instructions
- 1. Peel the parsnips, carrots, onion, and garlic.
- 2. Dice all the ingredients into small cubes.
- 3. Heat some butter in a pot.
- 4. Add the vegetables to the hot butter and sauté them briefly.
- 5. Deglaze the vegetables with the broth.
- 6. Cover the pot with a lid.
- 7. Simmer the soup on low heat for about 30 minutes.
- 8. Then puree the soup until smooth.
- 9. Stir in the cream and the crème fraîche.
- 10. Add the parsley.
- 11. Season the soup with salt, pepper, and nutmeg.
- 12. Now serve the soup hot.
