Ingredients
- 16 Parsley Roots (medium-sized)
- 4 tbsp fresh herbs (finely chopped, e.g. thyme, parsley, rosemary..)
- 6 tbsp breadcrumbs
- 3 tbsp olive oil (cold pressed)
- ghee
- 0.5 lemon (freshly squeezed)
- salt
- pepper (freshly ground)
- 1 bunch parsley
Instructions
- 1. Wash the parsnips thoroughly.
- 2. Peel the parsnips completely.
- 3. Heat one tablespoon of ghee in an oven-safe pan.
- 4. Gently sweat the parsnips in it on all sides over medium heat.
- 5. Pour in lemon juice and 80 milliliters of water.
- 6. Reduce the heat and simmer the roots covered for 6 to 8 minutes until tender.
- 7. Season the roots with salt and pepper.
- 8. Preheat the oven grill.
- 9. Mix breadcrumbs and herbs with oil, salt, and pepper to form a mixture.
- 10. Scatter the breadcrumb mixture evenly over the parsnips.
- 11. Press the breadcrumbs down slightly.
- 12. Place the pan under the hot oven grill.
- 13. Gratin the parsnips until they are golden brown.
- 14. Serve the roots on fresh parsley.
- 15. Serve the dish immediately.
