  1. 1. Toast the pine nuts in a pan without added fat until golden brown. Remove them and set aside.
  2. 2. Wash the basil, shake off excess water and pick the leaves off the stems. Puree the leaves together with the Parmesan and the oil until smooth.
  3. 3. Roughly chop the toasted pine nuts and stir them into the pesto. Season the mixture to taste with salt and pepper.
