  1. 1. Toast the pine nuts in a pan without added oil until fragrant. Rinse the parsley and basil under cold water, pat them dry, and pick the leaves off the stems.
  2. 2. Drain the tomatoes and save the oil. Put the pine nuts, herbs, tomatoes, lemon juice, and cheese into a blender and puree everything until smooth.
  3. 3. Measure out about 60 milliliters of the tomato oil. Slowly pour the oil into the pesto while mixing and blend until well combined. Season to taste with salt and pepper.
