🍽️ Fresh Parsley and Walnut Pesto

Ingredients
- 1 bunch parsley (approx. 30 g)
- 80 g walnut kernels
- 2 garlic cloves
- 2 tbsp grape seed oil
- 100 ml olive oil
- 2 tbsp freshly grated Parmesan
- salt
- pepper (from the mill)
- 1 dash lemon juice
Instructions
- 1. Thoroughly wash the fresh parsley under running water.
- 2. Pluck the green leaves from the stems and gently pat them dry with a kitchen towel.
- 3. Place the dry parsley leaves, walnuts, peeled garlic, grapeseed oil, and a splash of olive oil into a blender.
- 4. Blend the ingredients until they are finely chopped.
- 5. Slowly pour in more olive oil until the mixture reaches a creamy, smooth consistency.
- 6. Stir the grated Parmesan cheese into the pesto.
- 7. Finally, season the pesto to taste with salt, black pepper, and a squeeze of lemon juice.
