  1. 1. Heat a non-stick pan over medium heat.
  2. 2. Add the pine nuts to the hot pan and toast them without extra fat until they are golden brown. Remove them and let them cool down completely.
  3. 3. Rinse the fresh basil under cold water and shake it dry thoroughly.
  4. 4. Carefully pluck the soft basil leaves off the tough stems.
  5. 5. Peel the garlic cloves and halve them lengthwise.
  6. 6. Grate the Parmesan cheese very finely using a fine grater.
  7. 7. Empty the food processor (a small kitchen appliance for chopping) and put the basil, the cooled pine nuts, and the garlic halves inside.
  8. 8. Pulse the ingredients in the food processor until finely chopped. Slowly pour in the olive oil while processing until a creamy, smooth paste forms.
  9. 9. Add the grated Parmesan to the pesto mixture and stir it in well.
