Ingredients
- 50 g pine nuts
- 2 handfuls basil
- 1 clove garlic
- 80 g Parmesan
- 125 ml olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Heat a non-stick pan over medium heat.
- 2. Add the pine nuts to the hot pan and toast them without extra fat until they are golden brown. Remove them and let them cool down completely.
- 3. Rinse the fresh basil under cold water and shake it dry thoroughly.
- 4. Carefully pluck the soft basil leaves off the tough stems.
- 5. Peel the garlic cloves and halve them lengthwise.
- 6. Grate the Parmesan cheese very finely using a fine grater.
- 7. Empty the food processor (a small kitchen appliance for chopping) and put the basil, the cooled pine nuts, and the garlic halves inside.
- 8. Pulse the ingredients in the food processor until finely chopped. Slowly pour in the olive oil while processing until a creamy, smooth paste forms.
- 9. Add the grated Parmesan to the pesto mixture and stir it in well.
- 10. Finally, season the pesto to taste with salt and black pepper.
