🥗 Penne Pasta Salad with Goat Cheese

Ingredients
- 1 onion
- 4 tbsp olive oil
- 400 g penne
- salt
- 1 cucumber
- 1 yellow bell pepper
- 300 g feta
- 2 sprigs dill
- 1 lemon (juice)
- salt

Instructions
- 1. Peel the onion.
- 2. Cut the onion into thin rings.
- 3. Heat 1 tablespoon of oil in a pan.
- 4. Sauté the onion rings for 2 to 3 minutes over low heat until translucent.
- 5. Remove the pan from the heat.
- 6. Let the onions cool down.
- 7. Cook the penne in salted water until al dente (firm to the bite).
- 8. Drain the pasta.
- 9. Rinse the pasta with cold water to stop the cooking process.
- 10. Let the pasta drain well.
- 11. Wash the cucumber.
- 12. Cut the cucumber in half lengthwise.
- 13. Slice the cucumber thinly or shred it.
- 14. Wash the pepper.
- 15. Remove the seeds from the pepper.
- 16. Cut the pepper into pieces.
- 17. Cube the feta cheese.
- 18. Rinse the dill.
- 19. Shake the dill dry.
- 20. Pick off the fine dill tips.
- 21. Set aside some dill tips for garnishing.
- 22. Gently toss the pasta with the onions, cucumber, pepper, feta, and dill.
- 23. Whisk the remaining oil with the lemon juice.
- 24. Season the dressing mixture with salt and pepper.
- 25. Fold the dressing mixture into the salad.
- 26. Garnish the salad with the remaining dill.
- 27. Serve the salad.
