🍽️ Penne with peas, zucchini and feta

Ingredients
- 200 g green beans (frozen; thawed)
- 100 g turkey ham
- 2 zucchini
- 2 garlic cloves
- 4 sprigs mint
- 4 tbsp olive oil
- 400 g whole wheat penne
- 125 g peas (freshly shelled or frozen, thawed)
- salt
- pepper
- 1 tbsp lemon juice
- 1 box cress
- 120 g feta (45% fat in dry matter)
Instructions
- 1. Bring water to a boil and add the beans for 5 to 7 minutes.
- 2. Remove the beans and shock them immediately with cold water.
- 3. Let the beans drain and squeeze them out of the pods.
- 4. Cut the ham into strips or small cubes.
- 5. Wash the zucchini and slice it.
- 6. Cut the zucchini slices into bite-sized pieces.
- 7. Peel the garlic and chop it finely.
- 8. Wash the mint and shake it dry.
- 9. Pluck off the mint leaves.
- 10. Chop large mint leaves and leave small ones whole.
- 11. Heat 2 tablespoons of oil in a grill pan or regular frying pan.
- 12. Fry the zucchini over medium heat for 5 minutes.
- 13. Cook the penne in plenty of boiling salted water until al dente.
- 14. The cooking time takes 9 to 11 minutes according to package instructions.
- 15. Add the peas 3 minutes before the end of the pasta cooking time.
- 16. Cook the peas together with the pasta.
- 17. Fry the ham in a hot pan for 3 minutes over medium heat.
- 18. Add the chopped garlic to the ham.
- 19. Fry the garlic for 2 minutes.
- 20. Drain the pasta and let it drain well.
- 21. Add the pasta to the ham and toss it.
- 22. Mix the zucchini, beans and mint into the pasta.
- 23. Add the remaining oil.
- 24. Warm everything briefly together.
- 25. Season with salt, pepper and lemon juice.
- 26. Cut the cress from the bed.
- 27. Crumble the feta.
- 28. Garnish the penne with feta and cress.
