🍽️ Penne pasta with spicy ricotta cream

Ingredients
- 100 g ricotta
- 2 tbsp olive oil
- 1 small dried chili pepper
- salt
- pepper
- 250 g small tomatoes (5 small tomatoes)
- 1 clove of garlic
- 3 sprigs basil
- 175 g penne (preferably whole grain)
Instructions
- 1. Place the ricotta in a clean kitchen towel.
- 2. Squeeze the ricotta firmly to remove excess moisture.
- 3. Transfer the drained ricotta into a small bowl.
- 4. Stir one tablespoon of olive oil into the ricotta.
- 5. Remove the stems from the chili pepper.
- 6. Crumble the chili flesh into small pieces.
- 7. Add the chili pieces to the ricotta.
- 8. Season the mixture with salt and black pepper.
- 9. Set the bowl with the chili ricotta mixture aside.
- 10. Wash the tomatoes under running water.
- 11. Cut the tomatoes into quarters.
- 12. Remove the tough stem ends from the tomato pieces.
- 13. Remove the tomato seeds.
- 14. Halve the deseeded tomatoes crosswise.
- 15. Peel the garlic cloves.
- 16. Slice the garlic into thin pieces.
- 17. Wash the basil.
- 18. Shake the basil dry.
- 19. Pluck the basil leaves from the stems.
- 20. Chop the basil leaves roughly.
- 21. Heat the remaining oil in a large pan.
- 22. Add the garlic slices to the hot pan.
- 23. Sauté the garlic until translucent.
- 24. Add the prepared tomatoes to the pan.
- 25. Reduce the heat to a low setting.
- 26. Simmer the tomatoes until they are soft.
- 27. Fill a large pot with water.
- 28. Salt the water generously.
- 29. Bring the water to a boil.
- 30. Add the penne pasta to the boiling water.
- 31. Cook the pasta al dente according to package instructions.
- 32. Drain the pasta in a colander.
- 33. Add the drained pasta to the tomatoes in the pan.
- 34. Add the chopped basil to the pasta.
- 35. Season the pasta and tomato mixture generously with black pepper.
- 36. Mix all ingredients thoroughly.
- 37. Divide the pasta among the plates.
- 38. Take small mounds of the chili ricotta mixture.
- 39. Distribute the ricotta mounds over the pasta.
- 40. Serve the dish immediately.
