🍽️ Potatoes with Mint-Lime Quark

Ingredients
- 1 kg new potatoes
- sea salt
- 1 untreated lime
- 500 g quark (preferably skimmed quark)
- 100 g yogurt (preferably low-fat)
- 1 apple
- 2 sprigs mint
- pepper (from the mill)
Instructions
- 1. Boil water in a pot and add salt.
- 2. Place the potatoes in the boiling salted water.
- 3. Cook the potatoes for about 25 minutes until tender.
- 4. Grate some zest from the lime.
- 5. Squeeze the juice from the lime.
- 6. Add the lime zest and juice to a bowl with quark.
- 7. Add the yogurt to the quark mixture.
- 8. Stir everything well until creamy.
- 9. Peel the apple.
- 10. Cut the apple into four quarters.
- 11. Remove the core from the apple quarters.
- 12. Cut the apple quarters into small cubes.
- 13. Pluck the mint leaves from the stems.
- 14. Set aside a few mint leaves for garnish.
- 15. Finely chop the rest of the mint.
- 16. Add the apple cubes and chopped mint to the quark mixture.
- 17. Mix the ingredients well with the quark.
- 18. Season the quark mixture with salt and pepper.
- 19. Place the cooked potatoes on the plates.
- 20. Serve the mint-lime quark with the potatoes.
- 21. Sprinkle some sea salt over the potatoes.
- 22. Garnish the dish with the reserved mint leaves.
- 23. Serve the potatoes immediately.
