  1. 1. Boil water in a pot and add salt.
  2. 2. Place the potatoes in the boiling salted water.
  3. 3. Cook the potatoes for about 25 minutes until tender.
  4. 4. Grate some zest from the lime.
  5. 5. Squeeze the juice from the lime.
  6. 6. Add the lime zest and juice to a bowl with quark.
  7. 7. Add the yogurt to the quark mixture.
  8. 8. Stir everything well until creamy.
  9. 9. Peel the apple.
  10. 10. Cut the apple into four quarters.
  11. 11. Remove the core from the apple quarters.
  12. 12. Cut the apple quarters into small cubes.
  13. 13. Pluck the mint leaves from the stems.
  14. 14. Set aside a few mint leaves for garnish.
  15. 15. Finely chop the rest of the mint.
  16. 16. Add the apple cubes and chopped mint to the quark mixture.
  17. 17. Mix the ingredients well with the quark.
  18. 18. Season the quark mixture with salt and pepper.
  19. 19. Place the cooked potatoes on the plates.
  20. 20. Serve the mint-lime quark with the potatoes.
  21. 21. Sprinkle some sea salt over the potatoes.
  22. 22. Garnish the dish with the reserved mint leaves.
  23. 23. Serve the potatoes immediately.
