🍽️ Baked potatoes stuffed with leek and bacon

Ingredients
- 16 new potatoes (firm-cooking, medium size)
- salt
- 1 tsp cumin
- 1 stalk leek
- 20 g butter
- 100 g diced breakfast bacon
- salt
- pepper (from the mill)
Instructions
- 1. Wash the potatoes thoroughly and place them in a pot. Cover with water, add salt and cumin, and cook covered for 20 to 25 minutes until tender. Drain the water and let them cool down slightly.
- 2. Clean the leek and discard the dark green leaves. Slice the rest into thin rings and wash them. Preheat the oven to 200 degrees Celsius with fan setting.
- 3. Melt the butter in a pan and fry the bacon until crispy. Add the wet leek and simmer for 4 to 5 minutes, stirring occasionally. Season everything with salt and pepper.
- 4. Carefully scoop out the inside of the potatoes on one side using a special spoon. Fill the potatoes with the leek and bacon mixture. Place them in a baking dish and bake in the hot oven for about 20 minutes.
