  1. 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
  2. 2. Wash the duck thoroughly and pat it dry with a kitchen towel.
  3. 3. Place the duck in a pot with boiling water and let it simmer for about 5 minutes.
  4. 4. Remove the duck, pat it dry again, and brush all sides with a little honey.
  5. 5. Let the duck rest for about 1 hour in a cool, dry place.
  6. 6. Brush the duck with the remaining honey after the resting period.
  7. 7. Place the duck on a wire rack and put a drip pan underneath.
  8. 8. Roast the duck in the preheated oven with the breast side down for about 1 hour.
  9. 9. Mix the flour with the baking powder and about 120 milliliters of cold water to form a smooth dough.
  10. 10. Ensure that the dough no longer sticks to your hands.
  11. 11. Cover the dough with a damp cloth and let it rest for about 20 minutes.
  12. 12. Shape the dough on a floured work surface into a roll.
  13. 13. Divide the roll into 16 equal pieces.
  14. 14. Roll out each piece thinly.
  15. 15. Drizzle one flatbread with a little oil and place a second flatbread on top.
  16. 16. Roll the two flatbreads together into a thin slice.
  17. 17. Fry the flatbreads briefly in a hot pan with a little oil on both sides.
  18. 18. Remove the flatbreads from the heat as soon as bubbles form.
  19. 19. Remove the finished duck from the oven and let it rest briefly.
  20. 20. Slice the meat from the breast into thin slices.
  21. 21. Wash the leek and remove the hard ends.
  22. 22. Cut the leek into thin strips about 8 centimeters long.
  23. 23. Wash the cucumber and remove any hard spots.
  24. 24. Cut the cucumber into strips as well.
  25. 25. Place some vegetable strips and duck meat on the pancakes.
  26. 26. Drizzle some sauce over it and serve the dish.
  27. 27. Serve the remaining duck meat as you like with various side dishes and sauces.
