🍽️ Crispy Peking Duck with Homemade Flatbreads

Ingredients
- 1.8 kg Peking duck (1 Peking duck), ready for the kitchen
- 4 tbsp liquid honey
- 250 g flour
- 1 tsp baking powder
- flour (for working)
- sesame oil (for drizzling and baking the pancakes)
- 1 stalk leek
- 0.5 cucumber
- 100 ml hoisin sauce
Instructions
- 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 2. Wash the duck thoroughly and pat it dry with a kitchen towel.
- 3. Place the duck in a pot with boiling water and let it simmer for about 5 minutes.
- 4. Remove the duck, pat it dry again, and brush all sides with a little honey.
- 5. Let the duck rest for about 1 hour in a cool, dry place.
- 6. Brush the duck with the remaining honey after the resting period.
- 7. Place the duck on a wire rack and put a drip pan underneath.
- 8. Roast the duck in the preheated oven with the breast side down for about 1 hour.
- 9. Mix the flour with the baking powder and about 120 milliliters of cold water to form a smooth dough.
- 10. Ensure that the dough no longer sticks to your hands.
- 11. Cover the dough with a damp cloth and let it rest for about 20 minutes.
- 12. Shape the dough on a floured work surface into a roll.
- 13. Divide the roll into 16 equal pieces.
- 14. Roll out each piece thinly.
- 15. Drizzle one flatbread with a little oil and place a second flatbread on top.
- 16. Roll the two flatbreads together into a thin slice.
- 17. Fry the flatbreads briefly in a hot pan with a little oil on both sides.
- 18. Remove the flatbreads from the heat as soon as bubbles form.
- 19. Remove the finished duck from the oven and let it rest briefly.
- 20. Slice the meat from the breast into thin slices.
- 21. Wash the leek and remove the hard ends.
- 22. Cut the leek into thin strips about 8 centimeters long.
- 23. Wash the cucumber and remove any hard spots.
- 24. Cut the cucumber into strips as well.
- 25. Place some vegetable strips and duck meat on the pancakes.
- 26. Drizzle some sauce over it and serve the dish.
- 27. Serve the remaining duck meat as you like with various side dishes and sauces.
