  1. 1. Preheat the oven to 100 degrees Celsius with fan setting.
  2. 2. Let the frozen berries thaw at room temperature.
  3. 3. Whisk the egg whites together with the lemon juice until they are semi-stiff.
  4. 4. Stir in the powdered sugar and starch, letting them trickle in gradually.
  5. 5. Continue whisking until the mixture is glossy and firm.
  6. 6. Line a baking tray with baking paper.
  7. 7. Place four large mounds of the meringue mixture onto the tray.
  8. 8. Press a well into the center of each mound using a spoon or your palm.
  9. 9. Ensure the little tarts have a diameter of about 10 centimeters.
  10. 10. Bake the meringues in the preheated oven for about 40 minutes.
  11. 11. Make sure the meringues become crunchy but stay light in color.
  12. 12. Remove the meringues from the oven and let them cool down completely.
  13. 13. Whip the cream together with the vanilla flavor until stiff.
  14. 14. Fill the whipped cream into the wells of the cooled meringues.
  15. 15. Place the thawed berries on top of the cream.
  16. 16. Lightly dust the Pavlova with powdered sugar and serve.
