  1. 1. Turn on the oven and set it to 100 degrees Celsius with top and bottom heat.
  2. 2. Whisk the egg whites together with the lemon juice until they are semi-stiff.
  3. 3. Slowly pour the powdered sugar into the egg mixture.
  4. 4. Stir the mixture until it is smooth and glossy.
  5. 5. Fill the mixture into a piping bag fitted with a round nozzle.
  6. 6. Pipe circles about 9 cm in diameter onto a baking sheet lined with baking paper.
  7. 7. Bake the little cakes in the oven for about one and a half hours.
  8. 8. Keep the oven door slightly ajar during baking, for example by wedging a wooden spoon in between.
  9. 9. Allow the cakes to cool down completely after baking.
  10. 10. Scoop out the pulp and seeds from the passion fruits.
  11. 11. Mix the starch with a little of the juice until smooth.
  12. 12. Bring the remaining juice together with the passion fruit pulp to a boil.
  13. 13. Stir in the starch and 3 to 4 tablespoons of sugar.
  14. 14. Let the mixture thicken slightly while stirring constantly for 1 to 2 minutes.
  15. 15. Then remove the pan from the heat and let the sauce cool down.
  16. 16. Add a little more sugar if necessary.
  17. 17. Peel the mango and cut the flesh into small pieces.
  18. 18. Rinse the mint and shake it dry.
  19. 19. Finely chop half of the mint leaves.
  20. 20. Mix the yogurt with the crème fraîche, the lime zest, and the lime juice.
  21. 21. Sweeten the mixture with the remaining sugar.
  22. 22. Adjust the taste of the cream to your liking.
  23. 23. Fill the Pavlovas each with some yogurt cream.
  24. 24. Add the passion fruit sauce and the mango pieces.
  25. 25. Garnish them with the remaining mint.
  26. 26. Serve the cakes.
