  1. 1. Cut a small lid off the top of the patissons (small green squash variety).
  2. 2. Carefully scoop out the inside of the squash using a spoon.
  3. 3. Peel the onions and chop them very finely.
  4. 4. Mix the minced meat, rice, and chopped onions in a bowl.
  5. 5. Season the filling with salt and pepper to taste.
  6. 6. Fill the empty patissons with the meat and rice mixture.
  7. 7. Place the filled squash into a shallow baking dish.
  8. 8. Place the cut-off lids back on top of the squash.
  9. 9. Distribute small pieces of butter on top of the lids.
  10. 10. Pour some broth into the baking dish.
  11. 11. Preheat the oven to 180 degrees Celsius.
  12. 12. Bake the patissons in the oven for 45 minutes.
  13. 13. Sprinkle the finished dishes with grated Parmesan cheese before serving.
  14. 14. Garnish the dish with fresh rosemary sprigs.
