🍽️ Oven Roasted Patisson with Onions

Ingredients
- 6 small pattypan squashes (or 2 large yellow zucchinis)
- 2 red onions
- 2 tbsp butter
- salt
- pepper
- 2 tbsp olive oil
- basil (for garnish)
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Cut off the lid of the patissons (bottle gourds).
- 3. Remove the seeds from the inside of the gourds.
- 4. Cut the gourds crosswise into thick rings.
- 5. Grease a baking tray with some fat.
- 6. Place the gourd rings side by side on the tray.
- 7. Mix olive oil, salt, and pepper in a small bowl.
- 8. Brush the gourds evenly with the oil mixture.
- 9. Place the gourds in the preheated oven.
- 10. Bake them for about 20 minutes until golden brown.
- 11. The gourds should remain slightly firm to the bite.
- 12. Peel the onions while the gourds are baking.
- 13. Slice the onions into thin rings.
- 14. Melt the butter in a frying pan.
- 15. Add the onion rings to the hot butter.
- 16. Toss the onions briefly in the pan.
- 17. Make sure the onions do not change color.
- 18. The onions should remain crunchy.
- 19. Remove the gourds from the oven.
- 20. Plate the gourds.
- 21. Distribute the warm onions over the gourds.
- 22. Garnish the dish with fresh basil leaves.
