🍽️ Crispy Potato Cubes with Spicy Tomato Dip

Ingredients
- 1 onion
- 1 garlic clove
- 1 red chili pepper
- 4 tbsp olive oil
- 400 g chunky tomatoes (can)
- salt
- pepper
- 0.5 tsp paprika powder
- 12 small potatoes
- 1 sprig parsley
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Finely chop the onion and garlic.
- 3. Wash the chili pepper.
- 4. Remove the seeds from the chili pepper.
- 5. Slice the chili pepper into rings.
- 6. Heat two tablespoons of olive oil in a pan.
- 7. Sauté the onion, garlic, and chili pepper for about two minutes over medium heat.
- 8. Add the tomatoes to the pan.
- 9. Let the mixture simmer for about ten minutes over medium heat until it thickens slightly.
- 10. Season the sauce with salt, pepper, and paprika powder.
- 11. Blend the sauce until smooth.
- 12. Peel the potatoes.
- 13. Cut the potatoes into coarse cubes.
- 14. Place the potato cubes in a bowl of cold water.
- 15. Let the potatoes soak for about fifteen minutes.
- 16. Drain the water.
- 17. Rinse the potatoes.
- 18. Let the potatoes drain well.
- 19. Heat the remaining oil in a pan.
- 20. Fry the potatoes for 15 to 20 minutes over low heat until crispy on all sides.
- 21. Wash the parsley.
- 22. Shake the parsley dry.
- 23. Pick off the parsley leaves.
- 24. Remove the crispy potatoes from the pan.
- 25. Season the potatoes with salt and pepper.
- 26. Sprinkle the potatoes with the fresh parsley.
- 27. Serve the potatoes together with the sauce.
