🍽️ Crispy Parsnip Fritters with Fresh Orange Yogurt Dip

Ingredients
- 500 g parsnips (3 parsnips)
- 1 onion
- 80 g quark (4 tbsp)
- 2 eggs
- 30 g fine oat flakes (4 tbsp)
- salt
- pepper
- nutmeg
- 1 small organic orange
- 150 g yogurt (1.5% fat)
- 4 tbsp rapeseed oil
Instructions
- 1. Thoroughly wash the parsnips under running water.
- 2. Peel the parsnips completely.
- 3. Grate the peeled parsnips finely using a kitchen grater.
- 4. Peel the onion.
- 5. Finely chop the onion.
- 6. Place the quark into a large mixing bowl.
- 7. Add the eggs to the bowl with the quark.
- 8. Add the oat flakes to the bowl.
- 9. Mix the quark, eggs, and oat flakes thoroughly together.
- 10. Season the mixture with salt.
- 11. Season the mixture with freshly ground pepper.
- 12. Grate some fresh nutmeg directly into the mixture.
- 13. Take about 400 grams of the grated parsnips.
- 14. Stir the grated parsnips into the quark mixture.
- 15. Stir in the finely chopped onion.
- 16. Rinse the orange under hot water.
- 17. Dry the orange with a cloth.
- 18. Grate the fine outer skin of the orange (zest).
- 19. Peel the orange so that you remove all white pith.
- 20. Hold an empty bowl under the orange.
- 21. Cut out the fillets between the membranes.
- 22. Catch the released orange juice in the bowl.
- 23. Take the remaining grated parsnips.
- 24. Add the remaining parsnips to the yogurt.
- 25. Add the orange fillets to the yogurt.
- 26. Add the grated orange zest to the yogurt.
- 27. Add the collected orange juice to the yogurt.
- 28. Mix all ingredients for the dip well.
- 29. Season the dip with salt.
- 30. Season the dip with pepper.
- 31. Wet your hands with water.
- 32. Shape eight small fritters from the parsnip mixture.
- 33. Check if the dough is too soft.
- 34. If necessary, stir in more oat flakes.
- 35. Take a large non-stick pan.
- 36. Add oil to the pan.
- 37. Heat the oil in the pan.
- 38. Place the fritters in the hot pan.
- 39. Fry the fritters on the first side over low heat.
- 40. Fry the fritters on the second side over low heat.
- 41. Fry the fritters slowly until they are golden brown.
- 42. Serve the fritters hot.
- 43. Serve the yogurt dip alongside.
