🍽️ Crispy Pastries with Fish Filling

Ingredients
- 400 g puff pastry
- 750 g cooked fish (salmon and cod)
- 2 tbsp butter
- 2 tbsp flour
- 250 ml milk
- salt
- pepper (from the mill)
- nutmeg
- 100 g grated cheese
- 1 egg
Instructions
- 1. Roll out the puff pastry flat.
- 2. Cut out circles with a diameter of about 10 to 12 centimeters using a round cutter.
- 3. Whisk one egg with two tablespoons of water in a small bowl.
- 4. Melt the butter in a saucepan and stir in the flour.
- 5. Let the mixture foam briefly.
- 6. Pour in the milk.
- 7. Simmer the sauce while stirring constantly for about 8 to 10 minutes until it thickens.
- 8. Remove the saucepan from the heat.
- 9. Let the sauce cool down.
- 10. Fold the chopped fish into the cooled sauce.
- 11. Stir the grated cheese into the fish mixture.
- 12. Season the filling with salt, pepper, and a pinch of nutmeg.
- 13. Brush the edges of the pastry circles with the egg-water mixture.
- 14. Place a spoonful of the fish filling in the center of each pastry circle.
- 15. Pull the edges of the pastry up on the sides to form triangles.
- 16. Press the triangles together firmly to seal the pastry.
- 17. Brush the outside of the pastries with the remaining egg mixture.
- 18. Place the pastries on a baking sheet lined with baking paper.
- 19. Preheat the oven to 200 degrees Celsius.
- 20. Bake the pastries for about 25 to 30 minutes until golden brown.
