  1. 1. Roll out the puff pastry flat.
  2. 2. Cut out circles with a diameter of about 10 to 12 centimeters using a round cutter.
  3. 3. Whisk one egg with two tablespoons of water in a small bowl.
  4. 4. Melt the butter in a saucepan and stir in the flour.
  5. 5. Let the mixture foam briefly.
  6. 6. Pour in the milk.
  7. 7. Simmer the sauce while stirring constantly for about 8 to 10 minutes until it thickens.
  8. 8. Remove the saucepan from the heat.
  9. 9. Let the sauce cool down.
  10. 10. Fold the chopped fish into the cooled sauce.
  11. 11. Stir the grated cheese into the fish mixture.
  12. 12. Season the filling with salt, pepper, and a pinch of nutmeg.
  13. 13. Brush the edges of the pastry circles with the egg-water mixture.
  14. 14. Place a spoonful of the fish filling in the center of each pastry circle.
  15. 15. Pull the edges of the pastry up on the sides to form triangles.
  16. 16. Press the triangles together firmly to seal the pastry.
  17. 17. Brush the outside of the pastries with the remaining egg mixture.
  18. 18. Place the pastries on a baking sheet lined with baking paper.
  19. 19. Preheat the oven to 200 degrees Celsius.
  20. 20. Bake the pastries for about 25 to 30 minutes until golden brown.
