🍽️ Veal Pie with Horseradish-Cranberry Dip

Ingredients
- 400 g flour
- 1 tsp salt
- 150 g cold butter
- 2 egg yolks
- 1 tbsp butter
- 2 stale rolls
- 150 ml warm milk
- 2 onions
- 2 garlic cloves
- 1 kg veal mince
- 50 ml whipping cream
- 40 ml sherry
- 1 pinch grated lemon zest
- 1 tsp dried marjoram
- 4 eggs
- breadcrumbs (as needed)
- salt
- pepper
- cayenne pepper
- 1 egg yolk
- flour (for the work surface)
- butter (for the pie tin)
Instructions
- 1. Mix flour, salt, butter, and egg yolk in a bowl.
- 2. Add 2 to 3 tablespoons of cold water.
- 3. Knead the ingredients quickly into a smooth dough.
- 4. Wrap the dough in cling film.
- 5. Chill the dough in the refrigerator for about 30 minutes.
- 6. Cut the bread rolls into small cubes.
- 7. Soak the bread cubes in the milk.
- 8. Peel the onions and garlic.
- 9. Finely chop the onions and garlic.
- 10. Sauté the vegetables in hot butter.
- 11. Squeeze the soaked bread cubes well.
- 12. Mix the minced meat, bread, cream, sherry, lemon zest, marjoram, and eggs in a bowl.
- 13. Fold in the sautéed onions and garlic.
- 14. Knead in enough breadcrumbs until the mixture is moldable.
- 15. Season the filling with salt, pepper, and cayenne pepper.
- 16. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 17. Grease the baking dish with butter.
- 18. Divide the dough into three parts.
- 19. Roll out two-thirds of the dough.
- 20. Place the dough base into the dish.
- 21. Roll the remaining dough part into a strip.
- 22. Place the dough strip around the base as a border.
- 23. Press the border firmly against the edges of the dish.
- 24. Trim off the excess dough.
- 25. Cut stars or flowers out of the dough remainder.
- 26. Fill the pie with the meat mixture.
- 27. Smooth the filling.
- 28. Place the remaining dough as a lid on top.
- 29. Press the lid edge well.
- 30. Prick the lid several times with a fork.
- 31. Brush the surface with egg yolk.
- 32. Place the cut-out stars or flowers on top.
- 33. Brush the decorations with egg yolk as well.
- 34. Serve the pie with the cranberry-horseradish sauce.
