  1. 1. Fill a pot with water and add salt. Heat it up.
  2. 2. Cook the egg noodles in the boiling water until they are al dente. Follow the instructions on the package.
  3. 3. Wash the bell peppers thoroughly.
  4. 4. Cut the bell peppers in half lengthwise.
  5. 5. Remove the seeds and the white membranes from the inside.
  6. 6. Cut the flesh into bite-sized pieces.
  7. 7. Wash the zucchini.
  8. 8. Slice the zucchini into thin rounds.
  9. 9. Clean the mushrooms to remove any dirt.
  10. 10. Slice the mushrooms into thin pieces as well.
  11. 11. Heat oil in a large frying pan.
  12. 12. Add the onions, bell peppers, mushrooms, and zucchini to the hot pan.
  13. 13. Sauté the vegetables briefly.
  14. 14. Add the garlic and ginger.
  15. 15. Stir everything and cook for about 4 minutes.
  16. 16. Add the drained noodles to the pan.
  17. 17. Season the mixture with soy sauce.
  18. 18. Add some fish sauce.
  19. 19. Warm up the serving plates.
  20. 20. Serve the pan onto the plates.
