🍝 Pasta with Sweet and Spicy Red Onion Sauce

Ingredients
- 3 red onions
- 30 g pancetta (1 piece)
- 1 sprig oregano
- 0.5 dried chili pepper
- salt
- 175 g pasta (e.g. tagliatelle)
- 1 tsp honey
- 2 tbsp red wine vinegar (or balsamic)
- 100 ml broth
Instructions
- 1. Peel the onions and cut them into thin strips.
- 2. Dice the pancetta into small pieces.
- 3. Wash the oregano leaves and shake them dry.
- 4. Pluck the oregano leaves off the stems.
- 5. Crumble the chili pepper into fine pieces using your fingers.
- 6. Heat a large non-stick pan over medium heat.
- 7. Fry the pancetta without added fat for about 5 minutes until crispy.
- 8. Remove the pancetta from the pan and place it on kitchen paper to drain the fat.
- 9. Bring plenty of water to a boil in a large pot and add salt.
- 10. Add the onion strips and oregano to the pan with the remaining frying fat.
- 11. Sauté the onions and herbs over medium heat for about 2 minutes.
- 12. Add the pasta to the boiling salted water.
- 13. Cook the pasta according to package instructions until al dente (firm to the bite).
- 14. Drizzle the honey over the onions in the pan.
- 15. Let the honey caramelize briefly.
- 16. Stir the vinegar into the onions.
- 17. Add the chili crumbs and broth to the onions.
- 18. Simmer the sauce over medium heat for 5 to 6 minutes.
- 19. Stir the prepared pancetta into the sauce.
- 20. Season the sauce lightly with salt.
- 21. Drain the pasta and let it drain well.
- 22. Serve the pasta with the onion sauce.
