🍰 Cheesy Pasta Muffins

Ingredients
- 250 g Spaghetti
- Salt
- 1 yellow bell pepper
- 5 cherry tomatoes
- 3 tbsp capers
- 4 eggs
- 125 ml whipping cream
- 2 tsp herbs of Provence
- Pepper (from the mill)
- 125 g mozzarella
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Cook the pasta in salted water until very al dente.
- 3. Drain the pasta, rinse with cold water, and let it drain well.
- 4. Place the drained pasta into a large bowl.
- 5. Wash the bell pepper, remove the core, and dice it finely.
- 6. Wash the tomatoes and dice them as well.
- 7. Mix the pasta with the bell pepper, tomatoes, and capers in the bowl.
- 8. Whisk the eggs with the cream and herbs in a separate bowl.
- 9. Season the egg and cream mixture generously with salt and pepper.
- 10. Drain the mozzarella and dice it.
- 11. Place paper muffin cups into the compartments of the muffin tin.
- 12. Distribute the pasta mixture evenly among the muffin cups.
- 13. Pour the egg and cream mixture over the pasta in the cups.
- 14. Sprinkle the diced mozzarella evenly on top.
- 15. Bake the muffins in the oven for about 25 minutes.
