🍝 Zucchini Pasta with Sage and Parmesan

Ingredients
- 400 g bowtie pasta
- olive oil (extra virgin)
- 2 zucchini
- 3 sage leaves
- Parmesan (block)
- butter
- salt
- pepper (freshly ground)
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut the zucchini in half lengthwise.
- 3. Cut the halves into thin strips.
- 4. Heat two tablespoons of oil in a pan.
- 5. Add the zucchini strips and the sage leaves to the hot pan.
- 6. Sauté the vegetables gently over medium heat for two to three minutes.
- 7. Season the zucchini with salt and pepper.
- 8. Cook the bow-tie pasta in salted water until al dente.
- 9. Drain the pasta.
- 10. Reserve a small amount of the pasta water.
- 11. Add two teaspoons of butter and two to three tablespoons of pasta water to the hot pasta.
- 12. Mix the pasta well until it becomes creamy.
- 13. Remove the sage leaves from the zucchini mixture.
- 14. Add the zucchini to the pasta.
- 15. Mix everything thoroughly together.
- 16. Taste the pasta and adjust the seasoning with salt and pepper.
- 17. Divide the pasta onto plates immediately.
- 18. Top the dish generously with grated Parmesan.
