🍝 Fresh Lemon Pasta with Arugula and Parmesan

Ingredients
- 350 g Linguine
- Salt
- 80 g Arugula (1 bunch)
- 1 Lemon
- 30 g Parmesan (1 piece)
- 1 Garlic clove
- 2 tbsp Olive oil
- Pepper
Instructions
- 1. Boil water in a large pot and add some salt.
- 2. Add the pasta to the boiling water and cook it al dente according to the package instructions.
- 3. Wash the arugula under running water.
- 4. Dry the arugula thoroughly, for example using a salad spinner or a kitchen towel.
- 5. Rinse the lemon under hot water.
- 6. Dry the lemon with a cloth.
- 7. Grate the lemon zest finely.
- 8. Squeeze the juice from the lemon.
- 9. Grate the Parmesan finely.
- 10. Peel the garlic cloves.
- 11. Mince the garlic very finely.
- 12. Heat the oil in a pan.
- 13. Add the minced garlic to the hot pan.
- 14. Sauté the garlic over medium heat until it is translucent and fragrant.
- 15. Drain the pasta.
- 16. Add the arugula and lemon zest to the pan with the garlic.
- 17. Mix everything well together.
- 18. Season the mixture with salt and pepper to taste.
- 19. Add the lemon juice.
- 20. Fold the Parmesan into the warm pasta.
