🍝 Pasta with Tomato and Cabanossi Sauce

Ingredients
- 500 g Penne
- 600 g Tomatoes
- 1 large Onion
- 2 tbsp Tomato Paste
- 200 g Cabanossi (sliced)
- 1 Garlic Clove
- Chili Peppers (to taste)
- Salt
- Pepper
- 0.5 tsp Sugar
- 2 tbsp Oil
- 50 ml Vegetable Broth
- Parsley (for serving)
Instructions
- 1. Bring a large pot of water to a boil and add salt.
- 2. Cook the pasta in the salted water according to the package instructions until al dente (still firm to the bite).
- 3. Wash the tomatoes thoroughly under running water.
- 4. Remove the hard stem end from the top of the tomatoes.
- 5. Cut the tomatoes into small cubes.
- 6. Peel the garlic cloves from their skin.
- 7. Dice the garlic very finely.
- 8. Heat oil in a large pan.
- 9. Add the finely diced garlic to the hot oil and sauté briefly.
- 10. Add the slices of Cabanossi sausage to the pan.
- 11. Fry the sausage slices briefly with the garlic.
- 12. Add the diced tomatoes to the pan.
- 13. Stir the tomato paste into the mixture.
- 14. Add some chili flakes or ground chili.
- 15. Fry the ingredients together for a short moment.
- 16. Deglaze the sauce with some vegetable broth.
- 17. Season the sauce with a pinch of sugar.
- 18. Season the sauce to taste with salt.
- 19. Season the sauce to taste with black pepper.
- 20. Let the sauce simmer gently for about 5 to 10 minutes.
- 21. Drain the cooked pasta in a colander.
- 22. Mix the drained pasta directly with the hot sauce in the pan.
- 23. Serve the pasta on plates.
- 24. Garnish the dish with fresh parsley.
