🍝 Squid Pasta with Zucchini and Peppers

Ingredients
- 4 squid tubes
- 2 spring onions
- 2 young zucchini
- 1 mild red pepper
- 2 fresh garlic cloves
- 500 g spaghetti
- salt
- 5 tbsp olive oil
- 1 lemon (juice)
- 0.5 tsp ras el-hanout
Instructions
- 1. Rinse the squid under running water and pat it dry with a kitchen towel.
- 2. Cut the squid tubes open from the side and lay them flat.
- 3. Score the inside of the tubes in a diamond pattern, but be careful not to cut all the way through the flesh.
- 4. Cut the squid into strips that are 2 to 3 centimeters wide.
- 5. Wash the spring onions and trim off the ends.
- 6. Cut the spring onions lengthwise into quarters and slice them into 3 to 4 centimeter long pieces.
- 7. Wash the zucchini and trim off the ends.
- 8. Slice or shave the zucchini into thin longitudinal slices.
- 9. Wash the peppers and cut them lengthwise.
- 10. Remove the seeds from the peppers and chop them finely.
- 11. Peel the garlic and slice it into paper-thin pieces.
- 12. Cook the pasta in salted water until al dente (firm to the bite).
- 13. Heat 2 tablespoons of oil in a hot pan.
- 14. Fry the garlic for 2 to 3 minutes until brown and crispy.
- 15. Make sure the pan is not too hot so that the garlic does not burn.
- 16. Remove the garlic from the pan and let it drain on kitchen paper.
- 17. Add 1 to 2 tablespoons of oil to the pan.
- 18. Sauté the spring onions over low heat.
- 19. Add the zucchini and cook it together for 2 to 3 minutes.
- 20. Drizzle the zucchini with a little lemon juice.
- 21. Season the zucchini with salt.
- 22. Heat the remaining oil in another pan.
- 23. Add the peppers to the hot pan.
- 24. Add the squid strips.
- 25. Fry everything together for 1 to 2 minutes.
- 26. Season the squid mixture with salt.
- 27. Drizzle the mixture with lemon juice.
- 28. Sprinkle Ras-el-Hanout (a spicy spice blend) over it.
- 29. Drain the pasta.
- 30. Toss the pasta in the zucchini mixture.
- 31. Fold the squid strips into the pasta.
- 32. Plate the pasta.
- 33. Garnish the pasta with the crispy garlic.
- 34. Serve the dish.
