🍝 Creamy Pasta with Asparagus and Mozzarella

Ingredients
- 200 g Tagliatelle
- 300 g green asparagus
- 150 g mini mozzarella balls
- 2 tbsp pine nuts
- 1 tbsp olive oil
- 250 ml vegetable broth
- Salt
- Pepper (from the mill)
Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Add the tagliatelle to the boiling water.
- 3. Cook the pasta for the time specified on the package until al dente.
- 4. Peel the bottom third of the asparagus spears.
- 5. Cut the peeled asparagus diagonally into small pieces.
- 6. Heat some oil in a large pan.
- 7. Sauté the asparagus pieces in the hot oil for a short time.
- 8. Add the pine nuts to the pan and toast them briefly.
- 9. Deglaze the pan with some broth.
- 10. Simmer the asparagus covered for about 6 to 8 minutes until tender.
- 11. Drain the cooked pasta and let it drain slightly.
- 12. Toss the drained pasta into the pan with the asparagus.
- 13. Add the mozzarella to the pan.
- 14. Season the dish with salt and pepper to taste.
