🍝 Asparagus and Salmon Pasta

Ingredients
- 250 g green asparagus (the lower third peeled, ends trimmed and cut into rough pieces)
- 6 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- salt
- pepper (from the mill)
- 200 g tagliolini
- 200 g salmon fillet (skinless)
Instructions
- 1. Put the asparagus into boiling salted water and cook it for about 8 minutes. Then remove it and let the water drain off.
- 2. Cook the tagliolini pasta according to the package instructions until al dente (still slightly firm in the center). Drain the water.
- 3. Cut the salmon into small strips.
- 4. Heat the oil in a large pan. Sauté the asparagus briefly, season it well with salt, pepper, and lemon juice. Stir in the lemon zest and the pasta, let everything warm up briefly. Then gently fold in the salmon strips and serve the dish on plates.
