🍝 Creamy Pasta with Soy Spinach Sauce

Ingredients
- 1 untreated lemon
- 1 shallot
- 2 tbsp margarine
- 200 ml soy cream
- salt
- pepper (from the mill)
- nutmeg
- 400 g penne
- 150 g baby spinach
- 50 g walnut kernels
Instructions
- 1. Rinse the lemon under hot water and pat it dry.
- 2. Grate the lemon zest finely and squeeze out the juice.
- 3. Peel the shallot and cut it into small cubes.
- 4. Melt one tablespoon of margarine in a pan.
- 5. Sauté the shallot in the margarine.
- 6. Pour the soy cream into the pan.
- 7. Stir the lemon juice into the sauce.
- 8. Season the sauce with salt, pepper, and nutmeg.
- 9. Let the sauce simmer uncovered for 10 to 15 minutes.
- 10. Wait until the sauce thickens to a creamy consistency.
- 11. Cook the penne in salted water until al dente (firm to the bite).
- 12. Wash the spinach and spin it dry.
- 13. Chop some spinach leaves finely.
- 14. Add the chopped spinach to the sauce.
- 15. Cook the spinach in the sauce for 2 to 3 minutes.
- 16. Melt the remaining margarine in a separate pan.
- 17. Lightly wilt the rest of the spinach in the margarine.
- 18. Chop the walnuts coarsely.
- 19. Taste the sauce again and adjust seasoning if needed.
- 20. Serve the pasta, sauce, spinach, and nuts on plates.
- 21. Sprinkle the lemon zest over the dish.
- 22. Grind some fresh pepper over the dish.
- 23. Serve the dish immediately.
