  4. 4. Melt one tablespoon of margarine in a pan.
  5. 5. Sauté the shallot in the margarine.
  6. 6. Pour the soy cream into the pan.
  7. 7. Stir the lemon juice into the sauce.
  8. 8. Season the sauce with salt, pepper, and nutmeg.
  9. 9. Let the sauce simmer uncovered for 10 to 15 minutes.
  10. 10. Wait until the sauce thickens to a creamy consistency.
  11. 11. Cook the penne in salted water until al dente (firm to the bite).
  12. 12. Wash the spinach and spin it dry.
  13. 13. Chop some spinach leaves finely.
  14. 14. Add the chopped spinach to the sauce.
  15. 15. Cook the spinach in the sauce for 2 to 3 minutes.
  16. 16. Melt the remaining margarine in a separate pan.
