🍝 Tagliatelle with Fava Bean and Tomato Sauce

Ingredients
- 500 g fava beans (frozen)
- 400 g tagliatelle
- salt
- 400 g cherry tomatoes
- 2 shallots
- 1 clove of garlic
- 3 tbsp olive oil
- 100 ml dry white wine
- 2 tbsp fresh chopped thyme
- pepper (from the mill)
Instructions
- 1. Let the fava beans thaw.
- 2. Bring water to a boil and add salt.
- 3. Cook the tagliatelle in the salted water until al dente (firm to the bite).
- 4. Wash the tomatoes thoroughly.
- 5. Halve the washed tomatoes.
- 6. Peel the shallots.
- 7. Peel the garlic.
- 8. Dice the shallots finely.
- 9. Dice the garlic finely.
- 10. Heat oil in a pan.
- 11. Add the diced shallots and garlic to the hot oil.
- 12. Sauté the vegetables gently until they are soft.
- 13. Add the thawed fava beans to the pan.
- 14. Deglaze the mixture with white wine.
- 15. Let the sauce simmer on low heat for about 5 minutes.
- 16. Add the halved tomatoes to the pan.
- 17. Add thyme to the sauce.
- 18. Let the ingredients simmer for 1 to 2 minutes.
- 19. Season the sauce with salt and pepper.
- 20. Drain the cooked pasta.
- 21. Toss the drained pasta into the sauce.
