🍝 Crispy Bacon Brussels Sprouts with Pasta

Ingredients
- 400 g Tagliatelle (or very wide ribbon pasta)
- 150 g Brussels sprouts
- 50 g Bacon
- 1 tsp Ghee
- 1 Onion
- 125 ml Vegetable broth
- 125 ml Whipping cream
- Salt
- Pepper (from the mill)
- Nutmeg
Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Add the pasta to the boiling water.
- 3. Cook the pasta until al dente (firm to the bite).
- 4. Drain the pasta in a colander.
- 5. Rinse the pasta briefly with cold water.
- 6. Let the pasta drain well.
- 7. Remove any wilted outer leaves from the Brussels sprouts.
- 8. Wash the Brussels sprouts thoroughly.
- 9. Cut the Brussels sprouts into quarters.
- 10. Cut the bacon into very fine strips.
- 11. Peel the onion.
- 12. Cut the onion into fine wedges.
- 13. Heat butter in a pan.
- 14. Fry the bacon in the hot butter until crispy.
- 15. Remove the bacon from the pan and set it aside.
- 16. Add the onions to the fat in the pan.
- 17. Sweat the onions until they are translucent.
- 18. Add the Brussels sprouts to the onion mixture.
- 19. Cook the Brussels sprouts briefly.
- 20. Pour the broth into the pan.
- 21. Pour the cream into the pan.
- 22. Let the mixture simmer gently for about 10 minutes.
- 23. Season the sauce with salt.
- 24. Season the sauce with pepper.
- 25. Add a pinch of nutmeg.
- 26. Fold the pasta into the sauce.
- 27. Warm the pasta briefly in the sauce.
- 28. Divide the pasta onto pre-warmed plates.
- 29. Garnish the dishes with the crispy bacon strips.
