🍝 Pasta with Smoked Salmon and Fresh Dill

Ingredients
- 400 g Spaghetti
- Salt
- 1 red onion
- 1 bunch arugula
- 300 g smoked salmon (sliced)
- 2 garlic cloves
- Olive oil
- Pepper (from the mill)
- 1 dash lemon juice
- Dill tips (for garnish)
Instructions
- 1. Bring a large pot of water to a boil and add some salt.
- 2. Cook the pasta in this salted water until it is al dente (firm to the bite).
- 3. Peel the onion and cut it into very fine strips.
- 4. Thoroughly wash the arugula.
- 5. Remove any damaged or wilted leaves from the arugula.
- 6. Dry the arugula, for example in a salad spinner.
- 7. Cut the smoked salmon into thin strips.
- 8. Peel the garlic cloves and chop them finely.
- 9. Heat 2 tablespoons of oil in a large pan.
- 10. Add the fine onion strips and the chopped garlic to the hot pan.
- 11. Sauté the vegetables over medium heat until they are soft and translucent.
- 12. Drain the cooked pasta and let it drain well.
- 13. Add the drained pasta and the smoked salmon strips to the pan.
- 14. Mix everything gently so that the salmon does not break apart.
- 15. Season the mixture with salt to taste.
- 16. Add freshly ground pepper.
- 17. Add some lemon juice and stir.
- 18. Divide the pasta and salmon mixture onto plates.
- 19. Place the dry arugula on top.
- 20. Garnish the dish with fresh dill tips.
- 21. Serve the pasta immediately while warm.
